Called a "turkey" in the United States, an "India" (d'inde) in France, and a"Peru" in Brazil, this is a quintessentially "Mexican" and "American" bird. The turkey was domesticated throughout Mexico (and parts of North America) as a pet and a source of food. Indigenous peoples domesticated different birds and dogs, but generally lacked draft animals. This meant that everything had to be carried by human labor. The Aztecs ate almost everything that crawled, slithered, flew, and swam, including animals that would make us cringe. While turkeys continued to be domesticated, other Aztec foods such as the grain amaranth, and spirulina algae have only recently been "discovered" as health foods.
